1 large cucumber
Salt to taste
3 clove garlic
2 cups plain yoghurt
1 tbsp chopped fresh dill
¾ tsp dried mint
1 tbsp olive oil
How to make:

Grate cucumber in a bowl and sprinkle lightly with salt and toss it. Let it rest for 30 minutes and then squeeze out the liquid.
In a medium bowl, mash the garlic and add 1 tsp salt. Add yoghurt and mix it well until smooth.

2 cups fresh basil leaves
1/2 cup freshly grated Parmesan cheese (about 2 ounces)
1/2 cup extra virgin olive oil
1/3 cup pine nuts/walnuts
3 garlic cloves, minced
1/4 teaspoon salt, more to taste
1/8 teaspoon freshly ground black pepper, more to taste
How to make:

Place the basil leaves and pine nuts into the bowl of a food processor and pulse several times.
Add garlic and Parmesan cheese and pulse several times more. Scrape down the sides of the food processor with a rubber spatula.
While the food processor is running, slowly add olive oil in a steady small stream. Adding the olive oil slowly, while the processor is running, will help it emulsify and help keep the olive oil from separating. Occasionally stop to scrape down the sides of the food processor.

1 jalapeño, ribs and seeds removed
2-3 lime juice
1 small white onion, cut into chunks
½ bunch fresh cilantro
1 (4-ounce) dried and drained green chillies
3 cloves fresh garlic
2 teaspoons sugar (use less or omit if you wish)
1½ teaspoon cumin powder
½ teaspoon EACH: salt, oregano, and chilli powder (omit for a milder salsa)
How to make:

Blend all ingredients together in a food processor or blender until you reach desired consistency. Adjust seasonings to taste. Allow the salsa to sit for 10-30 minutes before serving.
